Some of the main stocks and flows entering and leaving Istanbul are: Water, Food, and Tourists. More than 90% of Istanbul’s drinking water comes from surface water collected in reservoirs which then go through water treatment plants and are distributed through pipelines and consumed by people in the city. The Bosphorus is an internationally significant waterway which connects the Black Sea and Sea of Marmara and is used for the passage of goods being imported and exported to other countries. Turkey is self sufficient in terms of food due to its fertile soil, access to water, suitable climate, and hard-working farmers. Fresh produce is brought into Istanbul from different parts of the country as well as exported. Agricultural resources are vast and offer considerable potential for expansion. For this, the government can encourage farmers to adopt modern techniques with mechanization and provide certain infrastructure related to irrigation and cultivation for the enhancement of the sector. Tourists are another example as they cause daily changes in population (particularly in the summer months) in the historic center due to the number of them visiting tourist attractions which increase pedestrian movement, the demand for accommodation facilities and public transportation throughout the day.
